I have an immense amount of appreciation for anyone who has the strength & patience to knead this dough by hand. Mix with a spatula until the dough just comes together. They rose a LOT and got nice and brown. If I wanted to prep this the day before and let the dough rise in the fridge would you recommend I let it go through the first or second rise in the fridge? So glad you nailed it from the first time. It will take the guess work out of the recipe because a gram will always be a gram, but a cup won't always measure out to be the same, so you're more likely to achieve accurate results. It is a soft dough and a bit sticky after kneading, but shouldn’t be too sticky. I did use a scale to measure everything and it made a huge difference. They are BEYOND DELICIOUS. Placing them far from each other on a baking sheet is the way to go, but may I also suggest that you flatten them into disks with your hands after you do so (before the second rise).
